On reboot all stores in the First Storage Group fail to mount. I have set MSExchangeSA to be dependant on StarPortService.
Any clues?

Going to answer my own post following a very rapid reply from support.
Don't use dynamic disks with remote storage.

...that's why Microsoft removed dynamic disk support from their MS initiator 2.x (well, better say - made it unusable).
