We have for about 6-7 single Hyper-V VPS servers (node0-node6) each with 24-32 GB RAM. Every server has RAID 10 with 4x500 GB HDD. On each server is about 10-20 VMs.
How can i get info how much is every node currently using IOPS and MB/s? Will be two HA iSCSI starwind nodes each with 16x 1TB HDD RAID 10 enough to host all physical server VM's? I need to calculate Starwind HA config size.

You need some sort of third-party monitoring software. I'd suggest this:

PS It's a pity VEEAM Monitor does support VMware ESX / ESXi only.

Which columns shows Disk IO (HyperV_Mon)? Because I can see only 25KB/s disk usage and this doesn't sound right to me
