Hello,
we have a Windows 2012 Cluster with 2 Server and starwind native san V6.0.6399. We would like to change the ip address/subnet from each server. is that possible? what should we do?

Yes, it is possible. The safest and easiest way to do that is presented in v8. Please let me know if you will update to it and I will provide you with instructions.

At the moment we won't change the Version. How can we do this in V6? Do you have an instruction guid?

In v6 You need to bring one of the HA mirrors down (remove it), add it back, and specify the new IPs in the device creation wizard.
