Is it safe to have a LUN or multiple LUNs fully take up the size of the disk Volume? Or is it best practice to leave some space on the diak volume similiar to the recommendation that a VM take up no more than 80% of the space in a LUN?

It`s absolutely safe solution. In case of HA you`ll need little more free space for journal, but its very tiny, so you can even don`t worry about it
