How much memory I put on wbcahe for ha volumes?

This depends on the storage size and purpose completley, can you provide some more information?

3,8 TB RAID5
3 volumes with 1 TB
The purpose is VM´s (ESX4.1) storage.
6 MB of memory

Since you are using a RAID5 which is not the best writer - I'd recommend to spend 2 Gb on cache
this will not be an overkill, however - as soon as you fill your cache be ready for write performance degradations.
