OS other than Windows Server 2008?

If I am building a server that is only serving starwind iscsi target virtual basic disks,
can I get away with a different flavour of windows?
If I did get Windows Server 2008 do I need to get any CAL's?

StarWind can run on any OS (even on Linux, but we don't release this particular one to end-users yet). But for production we do recommend server OS branches.

No, you don't need anything from OS expect OS itself and network and storage stack. We ship all required stuff inside StarWind installation.
