The idea is to use the same 2 servers for App/DB/Web as well as for SAN storage purposes, can we assign, logical CPUs / Memory to various VMs. How much CPU/RAM does Starwind itself need.

I hope its not a dumb/RTFM question ;-)

Of course it is! Except I would use 3-way replication for storage and three head Hyper-V cluster and try to avoid as many switches as you can. It's a
better idea to throw in an extra 10 GbE NIC into every host then to deploy a 10 GbE switch raising project costs and storage network latency @ the same time.
