I'm setting up my HyperV/VSAN server and want to add an HA HyperV/VSAN later. Is it possible to add in the second VSAN for replication later?

You can use a standalone VSAN server and add a partner to it later, whenever you might need it later. It is possible, yet if you have VMs running on a StarWind-based volume, you will have some downtime when turning it from a standalone disk into an HA disk. This downtime is preconditioned by the fact that Microsoft iSCSI initiator needs to reconnect to the new target when your HA is created out of a standalone disk.
